Saitobigyu cattle
Hida beef cattle is carefully raised in Gifu Prefecture, and “Saitobigyu” can be considered the peak of this type of cattle. This is top-tier beef that is above the rating of “A5 grade.” About 100 heads of cattle appear at each market auction, and about 20% of these are deemed A5 Hida beef. Meanwhile, one Saitobigyu cow, the peak of Hida beef, may appear over the course of a week, but not always. This type of beef has finely marbled fat with a low melting point, so has a blissful taste. We are meticulous about serving this top-tier beef because we want customers to gain a profound understanding of the true deliciousness of Hida beef, and moreover, we want to see smiles on their faces.
It has been 60 years since we entered the meat industry in the Gifu region. Based on a passion for “Hida beef” cattle, which is the pride of the area, Bakuroichidai was launched with the determination to continue for at least 100 years.
