Bakuroichidai, Japan’s top purchaser of Hida beef cattle from Gifu, serves Hida beef.
It has been 60 years since we entered the meat industry in the Gifu region. Based on a passion for “Hida beef” cattle, which is the pride of the area, Bakuroichidai was launched with the determination to continue for at least 100 years. We wish to serve customers this delicious-tasting beef across an increasingly broad area with increasing attention to detail. This is the mission of Bakuroichidai, which is highly knowledgeable regarding top-tier Hida beef and is the top purchaser of this type of meat in Japan.

Purchasing one whole head of cattle at a time

The “bakuro” in Bakuroichidai refers to cattle and horse traders who stake their life on judging, buying, and selling cattle and horses. What Bakuroichidai places the most importance on is the ability to make judgments in order to select the highest quality meat. Based on our ability to detect the essential qualities of meat, we purchase Hida beef that we think are particularly outstanding, one whole head of cattle at a time. Since we completely use all cuts of the first-rate Hida beef cattle, we are able offer even high-quality, rare cuts for attractive prices. We stake our life on the careful selection of Hida beef because we want all customers to fully enjoy the deliciousness of this exceptional beef.

Saitobigyu cattle

Hida beef cattle is carefully raised in Gifu Prefecture, and “Saitobigyu” can be considered the peak of this type of cattle. This is top-tier beef that is above the rating of “A5 grade.” About 100 heads of cattle appear at each market auction, and about 20% of these are deemed A5 Hida beef. Meanwhile, one Saitobigyu cow, the peak of Hida beef, may appear over the course of a week, but not always. This type of beef has finely marbled fat with a low melting point, so has a blissful taste. We are meticulous about serving this top-tier beef because we want customers to gain a profound understanding of the true deliciousness of Hida beef, and moreover, we want to see smiles on their faces.

Hospitality

This beef can be enjoyed not only grilled, but also in sukiyaki and shabu-shabu hotpot dishes. Our meticulousness regarding ways of enjoying this beef as well as local vegetables is part of our hospitality aimed at serving truly the highest-grade beef.

Appreciation

We display the wooden tags of Hida beef producers at the entrances of our shops. This not only proves that our beef is Saitobigyu, but also conveys our appreciation to the producers who devote themselves to their work.
